Use citric acid in fruit wines to increase total acidity. 3.4 grams per gallon raises the acidity by 0.1%. (1 tsp = 4.0 gms) Citric acid has a wide variety of uses—in addition to wine making, it can also be used in cheesemaking, bath fizzies, sour salt, and pickling!
